Some buddies of ours came over for supper (and cake!) absolutely ages ago even though I painstakingly decorated a carrot cake, they anxiously waited very with patience. Anyway, this carrot cake comes from the Hummingbird Loaves of bread book even though the images continue to be not even close to amazing, it tastes (basically do let them know myself) Scrumptious and is really easy to create, I don’t know why I don’t allow it to be more frequently!

300g soft light brown sugar
3 eggs
300ml sunflower oil
300g plain flour
1tsp bicarbonate of soda
1tsp baking powder
1tsp ground cinnamon (plus extra to brighten)
1/2tsp ground ginger root
1/2tsp salt
1/4tsp vanilla flavoring
300g carrots, grated
100g shelled walnuts, chopped (plus extra chopped and whole to brighten)

For That Cream Cheese Frosting:
600g icing sugar, sifted
100g unsalted butter (at room temp)
250g cream cheese, cold

Equipment:
Three 20cm cake tins (base lined with greaseproof paper)

Preheat the oven to 170C (325F)

Mix the sugar, eggs and oil together inside a stand mixer ensuring they're incorporated well (hands mixer works equally well, when i’m sure would a mixer)

Progressively add some flour, baking powder, bicarbonate of soda, cinnamon, ginger root, salt and vanilla flavoring.

Stir within the walnuts and grated carrots until they're distributed (stir these in by hands avoid the mixer)

Pour the mix into pre prepared tins, bake within the oven 170C for 25-25 minutes then let it awesome on the wire rack.

Cream Cheese Frosting Method:

Beat the icing sugar and butter inside a stand mixer.

Add some cream cheese (all at once) and bet until completely incorporated.

Continue beating on medium-high-speed for around 5 mins being careful to not over beat as it can certainly become runny quite rapidly.

Assembling the wedding cake

Once the cakes are cold, place one on the cake stand and spread in regards to a quarter from the frosting regarding this.

Put the second tier on the top and spread another quarter of frosting regarding this.

Top using the last cake. Spread the rest of the frosting outrageous and sides. Finish decorating with walnuts along with a light sprinkling of cinnamon.
