I personally use cloves and bay leaves along with a tempering of onion and garlic clove. Add other whole spices preferred by variation. Fold in certain green spinach for the finish. Add veggies (chopped small) of preference using the tempering. Use red lentils(masoor dal) or petite yellow lentils (moong dal), or split pigeon pea(toor dal / arhar dal), or split chickpeas (chana dal), or use a mix of two or three from the pulses. Cooking depends upon the lentils used.
