    • 175g medium egg noodles

  • Method

    Put the curry paste inside a large saucepan or wok using the oil. Fry for 1 min until aromatic. Tip within the vegetable stock, coconut milk and brown sugar. Simmer for several mins.

    Add some noodles, carrots and Chinese leaf and simmer for 4-6 mins, until each one is tender. Add beansprouts and tomato plants. Add lime juice to taste and a few extra seasoning, if you want. Spoon into bowls and sprinkle with spring onions and coriander.

    This switched out a lot better than I was expecting. Simple and fast t omake and incredibly tasty. I'd exhaust vegie red curry paste accustomed another Thai curry paste. Didn't have Cherry tomato plants either! Added some fresh finely chopped chilli both towards the broth so when serving and used wide grain noodles rather of egg noodles.
