  • 1 teaspoon agave nectar
  • 1 large carrot, reduce matchsticks
  • 1 small cucumber, thinly sliced
  • ½ cup grain vinegar
  • 1 tablespoons of granulated sugar
  • ½ teaspoon salt
  • 8 ounces extra firm tofu, thinly sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoons of sesame oil
  • 2 tablespoons of grain vinegar
  • 2 tablespoons of walnut syrup
  • pinch of salt
  • 1-2 teaspoon fresh grated ginger root
  • Fresh cilantro
  • Sriracha
  • Jalapeo peppers (diced)
  1. Combine the components for that pickled vegetables, submerging the carrots and cucumbers completely. Cover and refrigerate not less than 2 hrs.
