Crock pot vegetarian split pea soup recipe
Ingredients
  • 1 cup chopped yellow onions
  • 2 cloves garlic clove, minced
  • 1/8 cup good essential olive oil
  • 1/2 teaspoon dried oregano
  • 1 -1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground pepper
  • 2 cups medium-diced carrots (three or four carrots)
  • 1 cup medium-diced red boiling taters, unpeeled (3 small)
  • 1 pound dried split eco-friendly peas
  • 8 cups chicken stock or water
Directions

Inside a 4-quart stockpot on medium heat, saute the onions and garlic clove using the essential olive oil, oregano. salt, and pepper before the onions are translucent, ten to fifteen minutes. Add some carrots. taters. 1/2 pound of split peas, and chicken stock. Provide a boil, then simmer uncovered for 40 minutes. Skim from the foam while cooking. Add some remaining split peas and then simmer for an additional 40 minutes, or until all of the peas are soft. Stir frequently to help keep the solids from burning at the base. Taste for pepper and salt. Serve hot.
