Wonderful! Scrumptious! Wonderful! Wonderful! Yummy. I chose to make this for supper tonight. Did everything as directed ecxept I added 1/4 cup water once the mixture was simmering since it was very dry. I halved the recipe and did not use muenster cheese since i am dieting. I can not imagine how scrumptious that might be! Used to do give a teaspoon of grated parmesan towards the mix, along with a light sprinkle of grated swiss cheese on the top. Basically had been aware of this recipe when I had been a vegetarian, I'd have switched into an eggplant. ) Appreciate posting this type of scrumptious recipe Mirjam!

It was great. I overlooked the tomato paste (bc I did not have) and also the sugar and also the cheese bc I am vegan. And That I substituted the beans with brown grain. In Addition, I added baby bella mushrooms and substituted summer time squash for that zucchini. By simmering the eggplant shells within the water with salt, it gave it an ideal light salty taste! Very tasty and quite simple!
