Ingredients:
corn tortilla, torn in pieces
meaty chorizo for example longaniza
kosher salt, divided
coarse ground pepper
favorite crumbled cheese, for example fresco, cotija or feta
Directions:
Place medium-size saut pan over medium heat and add oil. When oil is hot, add torn bits of corn tortilla, Prepare three or four minutes or until golden brown and crisp remove. Add chorizo without casing and permit to brown 4 minutes, using wooden spoon to interrupt up meat.
Add black beans and juices, cup HERDEZ ® Salsa Verde, crispy corn tortilla pieces, 1 teaspoon pepper and salt.
Stir to mix, reduce heat to medium low and simmer about four to five minutes. Using bean or potato masher, mash to preferred consistency.
Adjust salt to taste, remove from heat and let stand a few minutes. Place beans in serving bowl, top with crumbled cheese, a couple of drizzles of HERDEZ ® Salsa Verde and revel in!
