This light and scrumptious salad includes a wonderful, vibrant living energy and it is best eaten your day it's made. Because the kale marinates it tenderizes, but do attempt to choose more youthful, smaller sized leaves, because they are simpler to digest. I really like this when I’m feeling tired or like I haven’t been eating good enough, because it instantly perks me up. Kale is really a superfood, filled with vitamins, minerals and fiber. The cranberries add a little sweetness. I additionally just like a scattering of pine nuts about this salad they provide a mellow, buttery crunch into it. This salad constitutes a welcome addition to some salad platter, or perhaps an accompaniment to sea food entrees or chicken .
Ingredients
- 1 bunch youthful kale, stems removed, reduce ½ inch wide strips
- ½ small red onion, sliced thin
- ½ cup dried cranberries
- 1 tablespoon lemon or two tablespoons orange juice
- 1 tablespoon olive or untoasted sesame oil
- 1 teaspoon finely grated ginger root root
- Ocean salt to taste

Preparation
Chuck the ball ingredients together completely inside a mixing bowl. Season to taste. Let sit not less than twenty minutes to tenderize.
