Note. These recipes use NZ measurements. 1 c = 1 cup = 250 ml. 1 T = 1 tablespoon = 15 ml. 1 D = 2 teaspoons. 1 t = 1 teaspoon = 5ml. If you are in the usa, you might find you'll need a little extra baking powder in recipes which use it.
185g softened butter
1 1/2 c sugar
4 gently beaten large eggs
3 t lemon zest
1 1/2 c flour
1 1/2 t baking powder
Glaze
Juice of just one lemon and threeOr4 cup sugar heated until sugar is melted
Cream butter and sugar until light, add eggs and lemon rind. Blend well.
Fold in sifted flour and baking powder alternately with sour cream. Mix lightly unitl smooth and put inside a well greased 21cm round spring form pan. Bake at 160C until done (about 40 minutes).
Leave cake in tin for any couple of minutes after which pour over glaze. Leave until awesome after which remove from tin. Serve with yogurt, or whipped cream along with a dash of lemon butter.
