apple cider syrup
Bring cider, butter, brown sugar, vanilla, and cinnamon to some boil over medium-high temperature inside a large saucepan. Reduce heat and boil lightly, whisking from time to time, until thick and syrupy, 30–45 minutes.
DO AHEAD: Syrup can be created 7 days ahead. Let awesome cover and chill. Provide 70 degrees before using.

Preheat oven to 425°. Whisk eggs, milk, flour, vanilla, salt, and teaspoon. cinnamon inside a medium bowl until smooth.
Melt 2 Tablespoons of. butter inside a 10” skillet, preferably surefire, over medium heat. Add apple and sprinkle with brown sugar and remaining teaspoon. cinnamon. Prepare, tossing frequently, until apple is coated and softened, about 4 minutes. Transfer to some plate.
Eliminate skillet as well as heat in oven until hot, 8–10 minutes. Carefully add remaining 2 Tablespoons of. butter to skillet, tilting to coat bottom and sides. Add apple to center of skillet pour batter over. Bake until pancake is puffed and golden brown round the edges and center is placed but nonetheless custardy, 12–15 minutes.
Serve drizzled with apple cider syrup.
