Aloo Shimla Mirch ki sabzi is definitely an everyday sabzi recipe in the majority of the Indian household. Taters and capsicum are cooked with spices and tastes amazingly great. This dish is extremely offered with Indian roti or naan.

Ingredients:
- 1/2 kg capsicum (coarsely chopped)
- 3 big taters (peeled and chopped)
- 1 tablespoons of ginger root minced
- 6-7 cloves garlic clove chopped
- 2-3 eco-friendly chillies finely chopped
- 2 small onions chopped
- 1 tomato, chopped
- A pinch of asafoetida
- 1/2 ts cumin seeds
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon fenugreek seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon dried mango powder
- 1 tablespoons of fresh coriander leaves chopped
- 2 tablespoons of oil
- Salt to taste
- Heat the oil inside a non-stick pan.
- Add fenugreek and seeds, let it splutter them.
- Add chopped onions and asafoetida.
- Stir fry the onion until it turns pink.
- Following the onion changes its color, add ginger root, garlic clove and eco-friendly chillies.
- Saute continue onions.
- Now add chopped tomato, taters and capsicum, also season with salt and spices.
- Stir continue and prepare on medium high flame.
- Cover the pan using its lid, simmer the flame and then leave to prepare until it tenders and moisture evaporates.
- Among stir 2-3 occasions and serve with Indian chapati.
