Ingredients
- 1/2 pound whole-wheat fusilli or any other spiral formed pasta
- 1/2 cup walnuts
- 1/2 cup crumbled feta cheese
- 1/2 cup diced red onion
- 1 1/2 cups chopped baby green spinach leaves
- two tablespoons walnut oil
- two tablespoons dark wine vinegar
- 1 clove of garlic clove, minced (about 1/2 teaspoon)
- 1/2 teaspoon Dijon mustard
- salt
- freshly ground pepper
Directions
Prepare the pasta based on the directions around the package. Drain the pasta, rinse it under cold water, and set it within the refrigerator to relax.
Inside a dry saute pan toast the walnuts on the medium-high flame until they're aromatic, a couple of minutes. Set the walnuts aside to awesome then chop them coarsely.
Inside a large bowl, toss together the chilled pasta, walnuts, feta cheese. onion, and green spinach. In a tiny bowl whisk the oil, vinegar, garlic clove and mustard. Pour the dressing within the pasta salad and toss to mix. Season with pepper and salt.
