This Sunday is Chinese Year, the entire year from the s-s-s-snake! We’ll be enjoying these Vegetable Spring Rolls (or things i call Egg Rolls) on Chinese Year they represent wealth and success. As you can tell, I am inclined to only have confidence in china superstitions which are advantageous.

Vegetable Egg Rolls Recipe
Servings: 50 egg rolls
Prep Time: 25 minutes

8 fresh shiitake mushroom caps or Chinese dried mushroom* caps, julienned
1/2 small cabbage (about 3 cups), shredded (napa or regular cabbage)
2 medium carrots, julienned
8-ounce can bamboo shoots, drained and julienned
2 cloves garlic clove, finely minced
2 teaspoons grated fresh ginger root
1 stalk eco-friendly onion, finely chopped
2 handfuls of fresh bean sprouts
1 tablespoon low sodium soy sauce
1 teaspoon dark sesame oil
1 tablespoon corn starch
50 spring roll wrappers, defrosted
oil, for frying
*If using Chinese dried mushrooms, soak them in hot water for 25 minutes to rehydrate. Stop and discard the stem.
Inside a large saute pan or wok, swirl in 1 tablespoon from the oil. Switch on heat to medium-high and immediately add garlic clove, ginger root and eco-friendly onion, stirring frequently. When the oil is hot, add some mushrooms, cabbage, carrots and bamboo shoots.
Turn heat to high and stir-fry the vegetables for around 2 minutes. after which add in the bean sprouts. Include the soy sauce and sesame oil. Prepare for an additional minute.
