This pork and beef chili is definitely an authentic Texas style chili created using no beans. Should you don't have dried chile peppers, use ground chile within the dish.
The chili is made from stewing beef, pork shoulder, and a number of dried chile peppers and seasonings.
Ingredients
- 2 pounds lean stewing beef, reduce 1-inch cubes
- 1 pound pork shoulder, reduce 1-inch cubes
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons vegetable oil
- 2 medium onions, chopped
- 6 cloves garlic clove, minced
- 4 cups water
- 2 medium dried ancho chiles, stems and seeds removed
- 5 dried red New Mexican chiles, stems and seeds removed
- 1 hot jalapeno or serrano chile, seeds removed, finely chopped, or pretty much for your taste
- 1 1/2 teaspoons ground cumin
- two to three teaspoons dried Mexican oregano

Preparation
Cut beef and pork into 1-inch cubes.
Inside a wide bowl or food storage bag, combine flour with pepper and salt. Toss meat cubes using the seasoned flour.
Inside a large skillet over medium-high temperature, prepare the meat within the oil, stirring frequently. Add some onions and garlic clove and saut before the onions are translucent. Add some 4 glasses of water cover and simmer for one hour.
Soak the dried chile peppers in serious trouble for 15-20 minutes.

Process drenched chile peppers inside a blender with only an adequate amount of the soaking water to create a pure. Strain out excess liquid.
Add some pure towards the meat mixture together with all remaining ingredients simmer for 1 1/2 to two hrs longer.
Serve with hot cooked pinto beans and grain quietly.
