1) Separate the egg-whites in the yolk (the yolk isn't needed), and beat the whites so they are creamy although not stiff.
2) Sieve the icing sugar right into a bowl and add some egg-whites, mixing them together until they form a strong paste which may be kneaded. (I added the whites in phases with this. When the mixture becomes too wet just include additional icing sugar). You may also give a drop or a couple of food colouring at this time and then any flavoured essences you would like.
