Question for you. I've come across these exact same recipes published all over the net everywhere. Yours may be the first that addresses the oil and fat problem. The main one factor I don't understand then 's the reason to help keep the egg yolk. Basically appreciate this properly, the yolk and corn starch would be to create an emulsion to avoid the oil from separating. When we get rid of the oil, don't let not get rid of the yolk?
I suppose my real question is better requested, what's the reason for the yolk after oil is eliminated?
I hadn’t find out about creating an emulsion. The main reason I stored it had been for that mouth feel. The egg helps to produce a smooth sauce and also the corn starch aids in thickening the sauce. We've been pleased with the outcomes but we could have been happy whether it varied much more but maintained the low fat.
