Or perhaps is it Pumpkin Bread?

I've chose to make this bread three occasions with a few "tweaks". Once using butter, once with canola oil and when with unsweetened apple sauce instead of body fat. The 3 were scrumptious and moist. Obviously we all know the healthier choice, don't we?

1 1/2 cup wheat grains pastry flour
1 cup of Splenda or sweetener of your liking to equal 1 cup sugar
1/4 cup canola oil or apple sauce
1 teaspoon baking powder
1 teaspoon sodium bicarbonate
1 egg
1 teaspoon vanilla
3 ripe bananas or 1 1/3 cups pumpkin (if using pumpkin add 1 teaspoon pumpkin cake spice)
3/4 cups chopped pecans (small pieces)

Mash Bananas in a tiny mixing bowl (this is when you would employ pumpkin rather)
Add Splenda, Baking Powder, Sodium Bicarbonate, egg and vanilla (optional pumpkin spice here)
Mix by hands until well blended. Stir entirely wheat flour and pecans

Pour right into a greased and floured bread pan.
