Katachi Amti is really a Maharashtrian thin dal water soup that is made of the strained water after boiling the dal from puran poli stuffing. The easy way have, dip a bit of puran poli directly into Amti and eat.

Katachi Amti Recipe Maharashtrian katachi amti with Puran Poli
Yield: 2 Servings
- Strained dal water after boiling chana dal for Puran poli - 2 cups, if it's not 2 cups adding remaining freshwater
- Leftover stuffing that is stuck in edges from the pan while making stuffing for puran poli
- Jaggery - if needed
For Spice powder :
- Desiccated coconut - 3 tablespoons
- Sesame seeds - 1 teaspoon
- Cumin seeds -1 teaspoon
For tempering (tadka):
- Oil - 1 tablespoon
- Cinnamon stick - ½ inch piece
- Cloves - 2
- Bay leaf - 1
- Curry leaves - 5-6
- Tamarind paste - 1½ tablespoon, if using whole tamarind then absorb the nice and cozy water, remove pulp and employ.
- Water - ¼ cup
- Red chili powder - 1 teaspoon
- Goda masala - ½ teaspoon or use garam masala or skip it
- Salt - to taste
- Dry roast the spice powder ingredients till gently browned. Allow it to awesome and grind it directly into fine or coarse powder as desire.
- Now add dal water towards the stuffing pan, allow it to arrived at simmer on medium heat. Because it gets warm, scrap the edges and bottom from the pan to get rid of leftover puran poli stuffing.
- Even though it is simmering, make tadka. Heat the oil in pan on medium heat. Once hot add cinnamon, cloves and bay leaf, saut for thirty seconds.
- Add curry leaves after which tamarind paste and water. Add red chili powder, goda masala and salt.
- Immediately add tadka towards the simmering dal.
- Add spice powder and stir. Taste, adjust the jaggery or salt when needed.
- If this reaches desire consistency, switch off the stove which is prepared to serve.
Shelf existence – Once cools completely, it may be refrigerated for 4-five days in airtight container.
Serving suggestions – Serve with Puran poli and grain.
Tips –
- If making on your own, then use ½ cup of chana dal. Soak them for 1-2 hour, boil into pressure oven till soft not mushy. Then strain water and employ that dal water to create amti.
