Ingredients

Method
  • Pluck the leaves of Palak ( don't use stem).Wash them correctly.
  • Boil water inside a vessel, give a pinch of salt and sodium bicarbonate, this can help keep your colour eco-friendly .Once the water start boiling place the leaves for 20seconds, remove and immediately place it in cold water. (This stops the entire process of cooking).
  • Puree the blanched leaves.
  • Heat a mixture of butter and oil and add chopped onions and prepare till light brown in colour, now add garlic clove .
  • Add chili powder, coriander powder and salt, mix correctly. (Add rather less of salt as Green spinach has natural salts inside it). Take oil to a corner of the pan, tilt the pan and sprinkle water, the pan will catch fire for any couple of seconds, this creates the 'Smoky Flavor' that certain will get in Dhaba cooking.
  • Add some Paneer and lightly mix and coat it with the spices. Prepare for any min.
  • Now add some pureed Green spinach and produce it to some boil and turn off the flame. Don't overcook because the gravy loses it's natural eco-friendly colour. Add fresh lemon juice and blend.
  • Heat ghee inside a pan and add cumin seeds, allow it to splutter after which add eco-friendly chilies, immediately pour it around the Palak Paneer.
  • Serve with Naan/Paratha/Jeera Grain
