Ingredients
- 2 3/4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon sodium bicarbonate
- 1 1/4 teaspoons baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups light brown sugar, packed
- 1/2 cup granulated sugar
- 3 large eggs
- 1 tablespoon vanilla flavoring
- 3 cups semisweet choc chips
- 2 cups chopped walnuts, optional
- 2 pints (4 cups) heavy cream
- 1/4 cup confectioner's sugar
- 1/4 cup miniature semisweet choc chips
Preparation
Preheat oven to 350°. Grease 2 (9-inch) cake plates put aside.
Inside a large bowl, sift together the flour, salt, sodium bicarbonate and baking powder. Within the bowl of the electric mixer, cream together butter, brown sugar and granulated sugar. Add some eggs, 1 at any given time, beating until incorporated. Beat within the vanilla. Add flour mixture, just a little at any given time, and blend until fully combined. Fold within the 3 cups choc chips and, if preferred, the walnuts. Divide the dough between your prepared cake plates and smooth the tops having a spatula.
Bake about half an hour or until pies are golden and slightly firm to touch but nonetheless soft. When the pies start to darken an excessive amount of prior to being baked through, cover with foil and continue baking. Let pies awesome completely on the wire rack.
As the pies awesome, whip the cream and confectioner's sugar until soft peaks form (tips curl). Fold within the choc chips. Refrigerate whipped cream until available. Spread the whipped cream within the pies and serve.
