
Pollo Dorados Tacos (Golden Chicken Tacos)
Ingredients
- 1/3 cup chopped onion (1 small)

- 1 14 1/2 ounce can Mexican-style stewed tomato plants, undrained, chop up
- 1 4 ounce can diced eco-friendly chile peppers, undrained
- 3 cups shredded cooked chicken
- 12 6-inch corn tortillas*
- 1/4 cup vegetable oil
- 2 cups shredded lettuce
- 1 tomato, seeded and diced
- 1/2 cup Mexican crema or creme fraiche
- 1/4 cup crumbled or shredded queso fresco or queso anejo (1 ounce)
- Fruit salsa or any other salsa (optional)
Directions
- Inside a large skillet prepare onion within the 1 tablespoon herbal until tender. Stir in canned tomato plants and chile peppers. Simmer, uncovered, about a few minutes or until the majority of the liquid is evaporated stir in chicken.
- Place 1/4 cup from the filling on a single finish of every tortilla and roll-up secure with toothpicks. Pour the firOr4 cup oil right into a clean large skillet heat over medium heat until hot.
