Ingredients
- 6 tablespoons unsalted butter, softened, plus much more for baking sheet
- 1 1/4 cups cake flour (not self-rising), plus much more for baking sheet
- 3/4 teaspoon baking powder
- 1/4 teaspoon sodium bicarbonate
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup almond paste
- 4 large eggs, separated
- 1/2 teaspoon pure vanilla flavoring
- 1/2 cup dairy
- 1/2 cup cherry preserves, processed inside a mixer
- Sugar Glaze
- Gum paste cherry blossoms, (offered at Wendy Kromer Confections)
Directions
Preheat oven to 350 levels. Butter a 12-by-17" rimmed baking sheet, and line with parchment paper. Butter parchment, and mud with flour, tapping out excess put aside. Sift flour, baking powder, sodium bicarbonate, and salt right into a large bowl put aside.
Put 3/4 cup sugar and also the almond paste in to the bowl of the electric mixer fitted using the paddle attachment. Mix on medium-low speed until mixture resembles coarse meal, a couple of minutes. Raise speed to medium-high. Add butter mix until pale and fluffy, a couple of minutes. Add egg yolks and vanilla. Add flour mixture by 50 percent batches, alternating using the milk. Transfer to some large bowl put aside.
Put egg-whites in to the clean bowl of the electric mixer fitted with whisk attachment beat on medium-high-speed until foamy. Progressively add remaining 1/4 cup sugar, beating until soft peaks form. Fold one-third of egg-white-colored mixture into batter having a rubber spatula. Lightly fold in remaining egg-white-colored mixture.
Spread evenly into prepared sheet. Bake until a cake tester placed into center arrives clean, 15-20 minutes. Transfer sheet to wire rack let awesome completely. Unmold remove parchment.
Cut cake in two crosswise. Spread half with preserves top with remaining half. Refrigerate one hour. Trim cake, and reduce 1 1/2-inch squares. Transfer to some wire rack set on the rimmed baking sheet. Pour glaze over each petit four, distributing over top and sides to coat completely. Reuse glaze, straining to get rid of any solids, as needed. Refrigerate until set, about twenty minutes. Garnish with blossoms.

Cakes could be refrigerated as much as a couple of days.
