Just attempted making these dhoklas on your own. Usual obtain the ready mix packets from grocers. The knife arrived on the scene clean. However when I attempted going for a couple of pieces to serve. Bottom was saturated/ uncooked. I put to steam for way more than instructed. Totally disappointed following the effort put in it.
Response: Hi Biji, I'm sorry to listen to that the dhokla did not turn good. The reason why behind they did not turn good might be many.
1. If batter is simply too watery they will stay saturated after cooking.
2. Always steam on them medium flame (this is not on low or high flame) to prepare them perfectly.
3. When the knife arrives fix it means, dhokla are cooked. After removing them in the steamer, have them open for 15-twenty minutes before serving property off excess moisture or sogginess.

I've not attempted this yet but where are you able to purchase the eno salt?
Response: Hi, you can purchase eno fruit salt from medical store or supermarket. If it's not available, you should use 1/4 teaspoon sodium bicarbonate rather of eno fruit salt within this recipe.

I've attempted making dhokla 4 occasions but never succeed. help me. it either become saturated or hard as barfi, but never cooked perfectly. I do not understand where I've made mistake??
Response: Hi Sana, I'm so sorry that the dhoklas ate aren't being released well. I believe that there's a problem using the batter consistency. Batter must have medium thick consistency like idli batter (adjust the quantity of water to obtain the preferred consistency). Have you add some Eno fruit salt? After adding the Eno and mixing batter for any minute, have you pour the batter immediately?

i wish to know whether I'm able to use khane ka soda with oil and lemon in dhokla batter to really make it more soft and spongy?
Response: Yes, you should use sodium bicarbonate (khane ka soda) instead of Eno fruit salt within this recipe. Stick to the directions given below to make use of khane ka soda.

Response: The thali proven in step photo of the recipe is part of utencil particularly designed for making dhokla (referred to as dhokadiyu or dhokla oven in Gujarati). However many gas steamer utensils to make idli along with other similar products have such plates obtainable in it. I don't know if you're able to buy such type of thali individually anywhere.

Irrrve never been successful for making gujarati dhokla with vati dal earlier. However with your recipe and step-by-step photos, I could allow it to be with perfect soft and spongy texture within the try itself.
