Sweet and crunchy, this caramel corn is really easy to create in your own home!
Tomorrow, March 17th, is my grandmother’s birthday.
I began my blog two days after Granny died from Alzheimer’s. Granny would be a baker, gardener, hard worker, coupled with a heart filled with love. She always experienced my siblings and that i looking forward to being in the kitchen area. Granny were built with a huge sweet tooth that they (thankfully!) passed lower in my experience.
Granny was noted for a couple of things. Her laugh, her sticky pecan rolls, homemade chex mix, pecan cake, and her buttery caramel corn. I printed her sticky pecan rolls and caramel corn recipes within my cook book making her pecan cake each November. For those who have attempted them, you realize her recipes are just like finding gold!
I consider Granny frequently this season and desired to share her very favorite recipe along with you on my small blog today. This caramel corn recipe can be found within my cook book as Old-Fashioned Caramel Corn on-page 94.
We make Granny’s caramel corn every Christmas. It wouldn’t be considered a holiday without them! Sticky, salty, and sweet it’s extremely difficult not to achieve for any second (or third or 4th) handful. Her caramel corn recipe is just the the best. Like the type of old-fashioned caramel corn you receive in a circus. But better. Making with love.
I made her caramel corn again a few days ago for today’s big cook book signing party inside my parents’ house. I've got a feeling us buddies could be more thinking about the caramel corn than my cook book. However that’s fine by me, Granny deserves the spotlight anyway.
Caramel corn is really easy to create at home! There’s almost no work involved. Actually, I promise’ll be shocked at its simplicity.
Begin with some air-sprang popcorn. Don’t possess a popcorn maker? Not a problem!
Perform a little shortcut version: Add 3 Tablespoons corn kernels to some standard lunch brown paper bag. Seal the bag tightly by folding outrageous 2 occasions. Microwave the kernels for roughly one minute 45 seconds on high, or as much as 2 minutes based on your microwave. This DIY air-sprang popcorn method makes 5 glasses of popcorn. You’ll need to do it two times to obtain 10 cups, that is what our caramel corn recipe requires.
Spread your popcorn on two large baking sheets. Then, result in the caramel. The caramel is made of a couple of fundamental ingredients. Brown sugar, corn syrup, butter, cream of tartar, and salt. It’s extra sticky, extra thick, and additional bubbly. Allow it to boil within the stovetop, remove from heat and add sodium bicarbonate.
Why cream of tartar? Cream of tartar may prevent crystallization because the caramel cooks.
Why sodium bicarbonate? The objective of sodium bicarbonate within the caramel would be to interact with the acidity (the brown sugar and corn syrup), which creates small co2 air bubbles. Hence, the foaming the thing is within the photo above. When the caramel has cooled in your popcorn, the environment bubbles within the caramel produce a softer texture. The softer texture means you won’t be biting into hard caramel. Rather, the caramel is soft and just slightly crunchy. It'll melt inside your mouth.
When the caramel is confused using the popcorn, simply bake it in a really low temperature to obtain the caramel to &"set&" evenly within the kernels. Then, pop ’til you are able to’t stop.
There’s no denying you won’t adore these items! Almost no set-up is involved and also you’re using quite simple, straight-forward ingredients. Plus, it’s an excellent recipe to create in advance as well as in bulk. Provide bake sales, on road journeys, function as a simple finger food at holiday parties everybody loves it. I bending the recipe for that party today I understood 10 cups wouldn’t be sufficient!
Want to accept caramel corn one stage further? Add 2 glasses of salted peanuts towards the popcorn before flowing the caramel on the top. I actually do this with my Peanut Butter Caramel Corn. The crunchy salty peanuts combined with the sweet caramel will take your breath away.
Here you decide to go. From the family to yours!

Cleaning it once a this recipe for that second time today, this time around doubling the caramel and boiling for four minutes instead of five, since the very first time I managed to get, there wasn’t enough caramel to coat the popcorn also it appeared too thick. This time around, I could coat the popcorn, but while a lot of the popcorn switched to be perfectly crispy, many pieces have globs of softer, soft caramel stuck for them (this appears to become caramel that pooled beneath the popcorn within the pan). Is that this because possibly I made use of an excessive amount of caramel? The only real other factor Used to do differently was which i sprang the popcorn around the stovetop with some refined coconut oil.

It’s the coconut oil. That excess fat coating the popcorn appears to become mixing using the caramel, therefore the caramel isn’t really becoming crunchy. Know what i'm saying?
So how exactly does it taste? Since I’m sure it’s scrumptious!
Hi Sally,
Your Granny’s caramel corn recipe may be the 4g iphone I'll ever have to try. My daughter is allergic to nuts and peanuts so more often than not she viewed others involving in caramel corn without complaining. I decided to locate a good recipe and also have some on her to test.

I'm initially from Monterey Ca. And there exists a chocolate store around the wharf which makes the very best caramel corn. I'm able to’t think that this should be their recipe. This really is scrumptious. It tastes similar to the one from Monterey. I've been attempting to replicate their recipe which is it. Thank granny on her recipe.

Hi, Sally! I'm a new comer to this website however i were built with a feeling relating to this particular recipe. And So I purchased a popcorn maker specifically for this (true story), and boy was I right. Your Nana’s caramel corn is amazing. My home is Germany where Grandmas tend to be more renowned for beef broth and the like and would not touch popcorn. Thanks goodness your grams was different. Appreciate discussing, love, Carolin
