Coffee muffins with mascarpone icing recipe
makes 12 small muffins
2 1/2 cups (350g) self raising flour

1/4 cup (60ml) freshly made coffee
125g butter, melted and cooled to 70 degrees
two tablespoons marsala
Icing
250g mascarpone cheese
1/2 cup (60g) icing sugar / powdered sugar
two tablespoons marsala (optional)
Coconut chips to garnish (optional)
1. Preheat the oven to 190C/375F. Grease a 12 hole muffin tin.
2. Pour the flour, sugar and almonds right into a large mixing bowl and stir to mix. Create a well within the center and add some egg, soy milk, coffee, melted butter and marsala.
3. Mix lightly just until all ingredients are combined. Take care not to over mix or even the muffins will come out soft. Spoon mixture in to the muffin holes.
4. Bake around the middle shelf for 22-25 minutes or until a skewer placed within the center arrives clean. Awesome on the wire rack when you result in the icing.
