Making the Beignets
- 2 3/4 cups all-purpose flour
- 1/3 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon sodium bicarbonate
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 cup buttermilk
- 1/3 cup water
- 1 egg
- 1 teaspoon vanilla flavoring
- Vegetable oil (for frying)
- Honey and confectioners' sugar (garnish)
- Inside a large bowl, combine dry ingredients.
- In another bowl, whisk buttermilk, water, egg, and vanilla.
- Add some dry ingredients, single serving at any given time, until just combined.
- Put the dough on the floured surface and flatten to at least oneOr2-inch thickness.
- Divide the flattened dough into 3-inch by 3-inch squares.
- Inside a fry pan, heat 2 " of vegetable oil.
- Fry beignets until golden brown (around three minutes) on sides.
- Place each beignet on the plate or wire rack lined with sponges to awesome.
- Drizzle honey on every beignet, and mud with confectioners' sugar.
