Banarasi Aloo Matar Sabji

I've lost count of the amount of occasions I've prepared Banarasi aloo matar since I'd bookmarked this recipe.
Less is much more is true with this incredible vegan potato curry in which the star player is tomato. Ingredients
- Taters - 3, large, washed and scrubbed of all of the dirt (don't peel)
- Tomato plants - 1/2 kg, washed making a + slit on the top of every
- Eco-friendly peas - 1/2 cup
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 tablespoons of (adjust)
- Oil - 2 tbsps
- Salt to taste
Method
- Cube the washed and scrubbed taters. You may also quarter them. I cut them into cubes.
- Heat 4 cups water in a stainless-steel vessel and produce to some boil. Reduce flame and put the tomato plants within the warm water and permit to prepare for 7-9 mts or till they soften. Take them off in the water having a slotten spoon and permit to awesome. Put aside water (don't discard)
- Inside a pressure oven, add 2 cups water, cubed taters and eco-friendly peas and pressure prepare up to two whistles. Switch off flame, permit the pressure to help ease and take away the lid.
- When the tomato plants awesome, peel your skin and grind to some fine paste.
- Heat oil inside a heavy bottomed vessel. When the oil is hot, add some cumin seeds and permit them to splutter. Add some turmeric powder and red chili powder and immediately add couple of tbsps water.
- Add some taters and eco-friendly peas together with any remaining water and also the water accustomed to prepare the tomato plants. Increase flame to medium high and prepare for 8-10 mts.
- Add some ground tomato plants, salt to taste and blend well. Simmer not less than 9-10 mts and switch off flame. If you would like more gravy, increase the water.
- Serve warm with phulka, chapati or grain.
Tips
- Usually Banarasi style aloo matar provides extensive gravy. I added less water.
