Mungbean Sprout and Shrimp Fritter
The Ukoy recipe proven here is made of mongo sprout(togue) and shrimps.
Sometimes known as Okoy, it's the Filipino shrimp fritter.
It's a fried and battered mixture of shrimp and vegetable, either mongo sprout(togue) or squash(kalabasa) .
This specific recipe is made from togue since I'm not keen on sweet squash fritter, but that is only a preference.
Typically, shrimps aren't shelled and heads remain intact because they are fried to some crisp.
However if you simply are not able to fry the shells crispy or bothered by swallowing them, It is best to take them off before adding the shrimps towards the batter.
You can pound the shells, give a little water to create shrimp juice and blend by using the batter for added shrimp flavor.
I additionally like my shrimp fritter with carrots that's reduce strips or julienned.
I attempt to sneak up carrots in almost any dish, as lengthy as it won't modify the taste.
Anyway, just a little carrot will not result in the batter sweet.
Other Asian cultures, such as the Thais and Malays, their very own form of the shrimp fritters.
They are also street food and fried crispy.
So can you be sure whether it's a Filipino shrimp fritter?
It is the dip that is included with it. Ours is nearly always offered and eaten having a vinegar, garlic clove and soy dipping sauce. Yummy.
