Some food scholars think that ketchup originated from China. In southern China, around the island once referred to as Amoy now known as Xiamen, cooks make use of a flavoring combination of fish essence and soy sauce they call keh chap. that may be, as continues to be recommended, a precursor. It's a piquant thought.
