Roasted Vegetable Macaroni & Cheese

  • 12 ounces elbow macaroni (or any form of pasta)
  • 1 Tablespoon butter
  • 8 ounces freshly-grated smoked or sharp white-colored cheddar cheese (don't use pre-grated cheese)
  • 1/4 cup freshly-grated Mozzarella dairy product, plus extra for garnish

Directions:

Preheat oven to 400°F. Make a large baking sheet (or two medium-sized baking sheets) with parchment paper or aluminum foil.

Inside a large bowl, toss diced vegetables with essential olive oil. Season having a couple of generous pinches of pepper and salt. Spread the vegetables in a level layer around the baking sheet(s). Put the garlic clove cloves in the heart of a sheet of aluminum foil, then wrap the foil around them to create a sealed packet and put the packet in the heart of the baking sheet. As the vegetables are roasting, bring a sizable pot of salted water to some boil, and prepare the pasta until al dente. Drain the pasta, after which return the pasta towards the pot and toss with butter over medium-high temperature until melted.

Meanwhile, inside a separate bowl, whisk together the evaporated milk, egg, salt, pepper, smoked paprika and cayenne until combined. When the butter is melted using the macaroni, pour within the evaporated milk mixture and stir until combined. Continue cooking over medium-high temperature, stirring from time to time, for around 2-4 minutes, or before the sauce involves a simmer.

Remove pan from heat and stir within the grated cheddar and Parmesan until melted. Then lightly stir within the roasted vegetables and roasted garlic clove cloves until combined. Serve immediately, capped with extra Mozzarella dairy product if preferred.
