Spicy Cuban Mojo Chicken with warm Mango-Avocado Salsa recipe

Chicken preparation ingredients:


1tsp cumin seeds (or cumin powder)
3 garlic clove cloves, peeled
1 red chili, stemmed

2 large boneless chicken breasts

For that Warm Salsa:


2 tablespoons of chicken drippings or essential olive oil
° cup orange juice

1 teaspoon honey
2 teaspoon thick sweet soy sauce
4-5 tablespoons of of chilled, unsalted butter
° firm but ripe mango, peeled, diced
° ripe avocado, peeled, diced
freshly chopped herbs to taste (coriander, parsley, etc.)
