These peanut butter blueberry cookies are simple to make and super tasty!

Total Time: 20 mins

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon corn starch
  • 1/2 teaspoon salt
  • 1/4 teaspoon sodium bicarbonate
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup creamy natural peanut butter (I made use of creamy natural from Trader Joe’s)
  • 1 egg
  • 1/2 cup mashed blueberry (about 1 medium blueberry)
  • 1 teaspoon vanilla flavoring
  • (optional: cane sugar, for sprinkling)

Directions:

Heat oven to 350F. Line a baking sheet with parchment paper.

Inside a medium mixing bowl, whisk the flour, baking powder, corn starch, salt, sodium bicarbonate and cinnamon until combined. Put aside.

Within the (separate) bowl of the stand mixer, cream the butter and brown sugar together on medium-high-speed until light and fluffy, about one minute. Add peanut butter, egg, blueberry, and vanilla, and continue mixing on medium speed until combined, scraping lower the edges from the bowl once as needed. Fold within the dry ingredients and blend until just combined.

Measure out a rounded tablespoon-filled with dough, roll it right into a ball, then put on the baking sheet. Make use of a fork to press lower the top ball making a criss-mix pattern. Sprinkle having a pinch of cane sugar, if preferred. Repeat with remaining dough.

Bake for 8-ten minutes or until slightly golden round the edges. Awesome for ten minutes on baking sheet, then transfer to some wire rack to awesome completely.

Serve immediately or store inside a sealed container for approximately 7 days.

Were built with a jonesing for many peanut butter blueberry cookies. These hit the place. I built them into vegan by utilizing chia seeds and coconut oil instead of the eggs and butter. I additionally used mostly spelt flour and excluded the corn starch since i didn’t have. The next time I believe I’ll omit the oil altogether and merely double of peanut butter. The finish result might be a floury, the feel pretty cakey however i a lot like it. I believe I'd flatten them out a little more to ensure they are again. I’ve already had three though, so that they’re very good.

I bake constantly and adopted the recipe exactly. I'm very disappointed using these cookies. Its unfortunate cause using the flavor combinations I thoight they’d be amazing. I baked these in 3 seperate batches. The very first batch didn’t look done at 8 min and so i left them in for the next 2min. These were dry. My second batch i required out at 8min plus they remained as dry. 3rd batch required out at 7min&....still dry. Even when they weren’t dry I still wouldn’t like them. These cookies are bland and certainly require more sugar. I even attempted creating a glaze to visit on the top simply to sweeten up a little. The blandness from the cookie still came through therefore the glaze didn’t assist in the smallest. I won't make these cookies again. Its a good idea, but simply needs more tweeking in my taste.

They’re good, however the texture switched out like cake. Nothing just like a cookie. I’m unsure what might have happened.

They were of low quality. These were very dry and sampled mostly like blueberry. No peanut butter flavor whatsoever. I’m disappointed.

Literally the very best peanut butter cookies ever. make sure they are NOW. Assuming you will get beyond the dough. It's so good. Sorry Granny. This recipe is replacing yours.

I didn’t use parchment paper. Just sprayed baking sheets gently with cooking spray (then easily wiped the majority of this off). I folded the dough balls inside a little granulated sugar before wearing the cookie sheet and crisscrossing with fork. Baked for that 8 minutes and left awesome around the cookie sheet 10 more before removing. Excellent!
