I really like food such as this. I really like the way it jogs my memory of mother’s cooking, and also the mixture of Cambodian and Vietnamese elements (even though it arises from Burma).
Mee kola is simple to create, but you must have all of the right ingredients.
There are various methods to make mee kola, however it’s typically vegetarian. Unless of course I allow it to be&... I add crispy Chinese sausage since it’s scrumptious.
Ingredients
I don’t genuinely have a recipe it’s about making enough for everyone.
To provide a concept of the quantities, for each serve you'll need roughly:
- 1 hard steamed egg, sliced
- 1 Tbsp . ground dried shrimp (ground inside a spice grinder, or pounded inside a mortar and pestle)
- 1 teaspoon preserved radish, rinsed and finely chopped
- half a Chinese sausage, sliced
- 1/4 C pickled vegies
- 1-to-1 1/2 squares of grain noodles
- 1/2 teaspoon minced garlic clove
- 1 teaspoon soy sauce
- 1 teaspoon dark soy sauce
- 1 Tbsp . chopped chives
- 2-3 Tbsp . nouc cham (‘special sauce’)
Method
First get the toppings ready, help make your special sauce and pickled vegetables.
You may make a fast pickle using sliced or grated carrot, sticks of cucumber, roughly shredded cabbage, small florets of cauliflower etc. and a few vinegar that’s sweetened a great deal with sugar. Put these inside a bowl and squeeze the vinegar in to the vegies gently together with your hands, and toss to mix. Leave to have an hour approximately before serving, or do that in advance.
