Thotakura masala/ Dahi masala hara koftas is a superb and classic eco-friendly vegetable kofta curry created using the some exotic flavours in the amaranth leaves put into spices and chickpea flour fried in roundel shapes and cooked in yogurt based gravy that balances the flavour. Amazing spiced amaranth kofta dumplings cooked in exotic yogurt based saucy gravy is bliss towards the tastebuds. Goes very well with grain, roti, chapatti etc!
Ingredients:
To make koftas:
Thotakura (amaranth) leaves, finely chopped - 1 cup
Hing - a pinch
Chilli pd - teaspoon
Salt - to taste
Sesame seeds - 1 teaspoon
Eco-friendly chillies, finely chopped - 1 teaspoon
Ginger root garlic clove paste - teaspoon
Chickpea flour - 1 cup
For that gravy:
Tomato, finely chopped - 1/2 cup
Onions, finely chopped - cup
Mustard seeds - teaspoon
Coriander powder - 1 teaspoon
Cumin powder - teaspoon
Chilli powder - 1 teaspoon
Salt - to taste
Yogurt - 1 cup
Method:
Inside a bowl, make the amaranth leaves, hing, chilli pd, little salt, sesame seeds, eco-friendly chillies, ginger root garlic clove paste, and chickpea flour. Just rest this mix for around 2-3 minutes and little water would release out. Combine each one of these ingredients well together without adding water. Shape them into lime sized roundels and aside. Inside a hot pan, add oil and deep fry these amaranth dumplings on the medium heat so they get cooked nicely. It takes approximately 6 mins to prepare.
In another pan or kadi, then add oil so when it will get hot, add mustard seeds. Once they crackle, add cumin seeds, finely chopped onions, little salt and fry up until the onions turns slightly golden in colour. Add finely chopped tomato plants and prepare until they get soft. Then add cumin pd, coriander pd, chilli pd and stir well. Place the lid on and prepare well up until the tomato plants are totally mashed. Add some koftas and lightly stir after which add yogurt and blend well. Add little water and produce to 1 boil and turn off the stove.
Serve with hot steamed grain, roti or chapatti.
