
Kolambi Bhat is an extremely easy delicacy made from grain and prawns. Because the name, Kolmabi Bhat suggests, it's a Maharastrian recipe. This Indian grain recipe comes from the Konkan coasts of Maharashtra and Goa. As being a seaside recipe, Kolambi Bhat uses fresh coconut milk by the bucket load. The grain and prawns are cooked together like Khichdi (dal and grain porridge). The only real difference here's that prawns are cooked with grain rather of dal.
Within the original Maharashtrian recipe, raw prawns are cooked directly using the masala and grain. But, if you're giving it a go the very first time, the smell may well be a bit too overwhelming for you personally. Blanche the prawns in oil gently before steaming it with grain.
Preparation Time: half an hour
Ingredients (Serves 4)
- Eco-friendly chillies- 4 (slit)
- Garlic clove pods- 4 (minced)
- Onions- 2 (chopped)
- Tomato plants- 2 (chopped)
- Tiger prawns- 15 (shelled and de-veined)
- Basmati grain- 2 cups
- Red chilli powder- 2tsp
- Turmeric powder- 1tsp
- Coriander powder- 1tsp
- Garam masala- 1tsp
- Coconut milk- 1 cup
- Coriander/cilantro leaves- 2tbsp (chopped)
- Oil- 2tbsp
- Salt- according to taste
1. Heat oil inside a deep bottomed pan and season it with garlic clove and eco-friendly chillies. Allow the oil be moderately hot otherwise it'll burn the garlic clove and destroy its flavour.
2. Add onions into it and prepare till they turn golden brown.
3. Adding the tomato plants, sprinkle salt and prepare on high flame before the tomato plants melt.
4. Add some prawns towards the pan and season it with turmeric, red chilli and coriander powder. Allow it to prepare using the spices for five minutes on low flame.
5. Now add some grain and sprinkle chopped coriander leaves in the top. Mix rid of it and prepare for just two-3 minutes on medium flame.
6. Pour coconut milk within the half cooked grain and allow it to prepare for just two minutes on low flame. Keep stirring so the coconut milk mixes evenly.
7. Finally add a little bit of ghee, garam masala and a pair of glasses of water. Cover wit a cover and prepare on low flame for ten minutes.
8. Keep stirring the kolambi bhat in order that it cooks uniformly and does not form protuberances.
The Kolambi bhat is prepared. Serve it hot with curd or raita.
