Mixed Dal Ambode Mixed Dal Masala Vada
Festival spread is definitely special because it contains the wide range of products varying from sweets, kheer, vadas, variety grain, kosambari combined with the regular menu.Though I'm not a large fan of masala vada, hubby dear likes all type of vadas which is an uncommon treat to create each one of these tasty goodies in your own home.I lately made these ambode for Navaratri festival. This mixed dal vada is excellent as using urad dal helps make the vada softer inside and yet another dals provides a crispier crunch outdoors. It's possible to dip them in spiced up curds making mosaru ambode(curd masala vada) that is even very tasty.
Ingredients:
1/2 cup Chana dal
1/2 cup Toor dal
1/2 cup Moong dal
1/2 cup Urad dal
1/4 cup chopped Cashew nuts
1 big Onion,finely chopped
1/4 cup chopped Coriander leaves
1 teaspoon chopped Curry leaves
2 tablespoons of chopped Mint leaves
5-6 Eco-friendly chillies
1" Ginger root
1/4 teaspoon Cooking soda
Salt to taste
Oil to deep fry
Method:
- Soak all of the lentils for several-4 hrs.Rinse them and drain the surplus water.
- Grind eco-friendly chillies with ginger root and salt to some coarse paste.Transfer to some big bowl.
- Grind the dals to some coarse paste in whipper mode.Don't grind to some smooth paste,it ought to be really coarse as well as the dal bites every now and then would add nice crunch towards the vadas.
- Add cashew nuts, chopped onion, coriander, curry leaves, mint leaves and ground chili paste down dal mixture and blend well.Be mindful the mixture should neither be very wet nor dry.
- Meanwhile heat oil inside a thick kadai for deep frying the vadas.
- Add cooking soda towards the vada mixture and beat well using the hands.
- Wet both hands and have a small lemon size mixture and flatten it with hands and deep fry until golden brown colored over medium flame.
Serve them hot with a few chutney/tomato sauce or because it is.
- Inclusion of cooking soda helps make the vadas crisp around the outside and soft inside. It is essential to obtain good vadas.
- In case your batter is extremely wet give a tablespoons of of grain flour into it and blend well making vadas.
- You are able to flatten the vadas still thinner and larger in dimensions compared to ones I made. However I like plump small vadas because they look cute.
- If you're making these vadas on the festival day avoid adding onions if you would like. But masala vada always is more enjoyable should you add onions into it.
- You can include 1/2 cup finely chopped dill leaves or other vegetables like amaranth, green spinach towards the vada batter making vegetables vada.
- You may also add grated carrot or beetroot or finely chopped cabbage towards the vada batter for any variation.
