Osso Buco Recipe
Osso buco is really a classic Italian recipe produced by slow cooking veal shanks before the meat is tender and succulent.
Veal shanks are tough cuts of meat with many different ligament inside them. Braising them gradually in liquid breaks lower individuals soft bits.

Ingredients
- 3 crosscut veal shanks, about 1 pound each
- ¼ cup canola oil (or any other vegetable oil)
- ½ large onion, peeled and chopped
- 1 medium rib celery, chopped
- 1 large carrot, peeled and chopped
- 4 cloves garlic clove, peeled and slightly crushed
- ¾ cup canned diced tomato plants (including liquid)
- 1 cup dry white-colored wine
- 4 cups brown stock (i.e. beef stock) or veal stock
- 1 bay leaf
- ½ teaspoon dried thyme
- 1 teaspoon whole black peppercorns
- Kosher salt and freshly ground pepper, to taste

Preparation
- Pre-heat oven to 350°F (175°C).
- Pat any excess moisture from the veal shanks with clean sponges. This can boost the browning from the meat.
- Create a couple of vertical (i.e. parallel towards the bone) cuts within the outer membrane from the shanks so the meat won't twist in poor condition although it braises.
- Season the shanks well with Kosher salt.
- Inside a heavy, cast-iron nederlander oven or brazier, heat the oil over high temperature, adding the meat and sear it completely, using a set of tongs to show it. Whenever a nice brown crust is promoting on every side of the meat, take it out of the pan and hang it aside.

- Add some carrots, celery, onions and garlic clove to pot and prepare for five minutes approximately, or before the onion is slightly translucent.
