Ingredients
- 1 rack of pork (4 lb/1.8 kg) with a minimum of six ribs, about, skin-on
- Salt and freshly milled pepper
- (Olive) oil, to taste
- 8 cloves garlic clove, thinly sliced
- 6 sprigs of rosemary oil, finely chopped
- 12 sage leaves, finely chopped
- 1 tablespoons of lard (or butter)
- 7/8 cup (7 fl oz/200 ml) white-colored wine
- 6 small shallots (or 3 large ones, decline in half lengthwise)
- 6 celery stalks, reduce 3-inch (8 cm) pieces
- 6 small carrots
- 6 (small) meiknolletjes (crimson top white-colored globe turnips)

- A roasting tin by having an optional trivet/rack
- A meat thermometer (optional)

Preparation
Choose your meat. Request a rib of pork (also referred to as rack of pork or carre de cotes ) with six ribs (rely on 1 rib per person) using the skin-on. The meat close to the loin is leaner, as the meat close to the shoulder is fattier and much more flavorful. Ask your butcher to chop away the meat between your ribs in the ends (this is whats called frenching ).
