
5-grain porridge with apples
The The month of january issue of Bon Appetit showed up per week approximately before Christmas. It had been filled with healthy, light recipes, and in the middle of the sugar and butter glut, each page was just like a breath of outdoors. The majority of the recipes, however, were decadent within their over-the-top costly ingredients and complex procedures. Eco-friendly smoothie with almond butter and flaxseed oil and agave syrup and matcha and &-? It had been again an excessive amount of. just within the other way.
Still, I am very good at hacking away in the fru-fru fluff and becoming lower towards the heart from the matter. Or even the heart from the recipe, so to speak. Then when my eyes lighted on the 5-Grain Porridge with Bee Pollen, Apples, and Coconut, I skipped right within the bee pollen part (because yeah right ) and going to the freezers to size up my Weird Grain Collection. I did not have the grains, however the headnote was generous about my inadequacies. &"Use what you have&-just boost the amount,&" they stated. And So I did, and also the porridge was lovely.
The topping, the apples and coconut, while clearly rather irrelevant, did seem interesting. Plus, I'd some softening apples around the windowsill and a few large-flake, toasted and sweetened snacking coconut within the kitchen. It had been worth a go.
Also it was worth a go. The sauteed apples, cinnamon, and coconut were so scrumptious they virtually defeated the objective of the porridge. I am talking about, is not porridge about maintaining a healthy diet, sparingly, gently? Because here' was battling urges to pig, gorge, stuff myself. The problem appeared rather counterproductive. And positively wonderful.
PS. My hubby abhors oatmeal, steel cut oatmeal, polenta, etc. Yesterday morning I coaxed him into eating a bowlful of the porridge. While eating, he accidentally made mm-mmm noises. I was both startled.
PPS. And just when i finished typing that last paragraph, my hubby visited your kitchen to repair his morning bowl of granola and stated, "I am surprised you did not cause me to feel that porridge today. It had been very good. It filled me up till 2 o'clock. Not too you allow a rat's heinie." (Since I am typing this and ignoring him.) "For any bowl of oatmeal, it had been okay. 5-Grain Porridge with Apples

In my first round, I did not have quinoa, amaranth, or wheat bran, and so i added oat bran and steel cut oatmeal. I like the thought of a multitude of grains, though, and so i may really buy some amaranth and quinoa before I make my next pot of porridge.
This recipe makes a lot of porridge and just enough apple-coconut topping for around two servings. Either combine topping, or simply make more when it's needed (I have been doing the later).
Update: leftover porridge is marvelous when used instead of the cooked cracked wheat during these pancakes .
for that porridge:
½ cup each brown grain and quinoa
¼ cup each amaranth, millet. and wheat bran
¾ teaspoon salt
6 cups water
Combine all ingredients inside a saucepan. Provide a boil. Reduce heat to medium low and simmer, partly covered, for 30-50 minutes, stirring frequently. (They are saying it requires 40-50 minutes, but mine ended in the 30-minute mark.)
for that apples:
small dollop of coconut oil
1 tart-sweet apple, peeled, cored, and reduce chunks
¼ teaspoon cinnamon
¼ cup coconut flakes
brown sugar
milk
Melt the coconut oil inside a skillet and add some apple chunks and cinnamon. Stir once after which allow the apples prepare, undisturbed. You would like them to obtain caramelized, not mushy. After they are brown somewhere, provide them with a stir and allow them to prepare on the other hand.
for everyone:
Spoon some porridge right into a bowl. Add 1 / 2 of the apples and coconut, along with a spoonful of brown sugar. Top with cold milk.
mmmm, love me some hot cereal. I've got a mixture of odd grains (although not quinoa - its flavor is simply too strange with this for me), however i grind these to a powder within my blender before I prepare them. Exactly why I make porridge in my household is to enable them to eat humble, simple food every now and then without complaining. It's nobody's favorite at our home, but It's important considering the surplus we usually accept.
I managed to get with quinoa today. As I could certainly taste a small earthy-bitterness (I presoaked the quinoa after which rinsed it multiple occasions to reduce the bitter), I discovered the addition enjoyable. It made my morning porridge taste unique and excellent.
