
This summer time, my sister provided some home-grown Squash. It's a number of Cucumber much like Sambar Cucumber (Begin to see the last pic). According to her suggestion, I made the decision to create Moru (Yogurt) Curry using the Squash. Typically, Moru Curry is made from Grated Coconut so the curry has thickness. When the Curd used is sour, vegetables or fruits are put into lessen the sourness.
Vellarikka Moru Curry
I have tried personally Plain Yogurt to make this Moru Curry. Because the Yogurt is thick, Irrrve never add grated Coconut. We enjoyed reading this tasty Vellarikka Moru curry with grain.
- Sambar Cucumber (Vellarikka) 2 cups (Peeled diced)
- Plain Yogurt – 2 cups
- Slit Eco-friendly Chillies – 3
- Turmeric Powder – 1/4 + 1/4 teaspoon
- Water – 1 cup
- Salt – to taste
- Finely sliced Shallots – five to six
- Dried Red Chillies – three or four
- Curry Leaves – A sprig
- Finely Minced Ginger root – 2 teaspoon
- Turmeric 1/4 teaspoon
- Fenugreek (Uluva) – A pinch
- Jeera (Cumin) Seeds or Powder – 1/4 teaspoon
- Oil – 2 tablespoons of
- Mustard – 1/2 teaspoon
- Peel the cucumber and take away the seeds. Dice it into small pieces.
- Inside a deep pan, prepare the cucumber pieces with salt, 1/4 teaspoon turmeric powder, slit eco-friendly chillies and little water. Prepare for five-7 minutes or before the cucumber pieces are tender.
- Meanwhile, blend the yogurt together with 1 cup water, 1/4 teaspoon turmeric and little salt.
- Pour the yogurt mix in to the cooked cucumber, stirring continuously. Simmer on low heat for five minutes. Do not allow the Curry to boil.
- Meanwhile, heat 2 tablespoons of oil in another pan and splutter mustard seeds.
- Saute shallots, red chillies, ginger root and curry leaves for any couple of minutes.
- Give a pinch of turmeric, cumin (jeerakam) and fenugreek. Stir and take away from heat.
- Add some seasoning towards the yogurt mixture and on stirring for any couple of more minutes.Increase the salt if needed.
- Serve with grain along with other Kerala Sides.
