- Onion – 1 medium (1 cup), roughly chopped
- Tomato – 2 medium (1 cups), roughly chopped
- Ginger root – inch piece
- Garlic clove – 1 clove
- Eco-friendly chilies – 2 small
- Cauliflower – 2 cups, broken into small florets
- Potato – 1 cup, cubed (ought to be same size cauliflower florets)

Serving suggestions – Serve with any Indian flat bread (paratha, roti, naan) together with any side salad (kachumber) or papadam or pickle. Or perhaps you could have it with plain grain.
- If you're in hurry, then boil taters, cauliflower and peas individually or microwave it while gravy is cooking. Combine it with the onion-tomato gravy at step 10 and lower the quantity of water at step 9 in curry.
