Batatyachi bhaji recipe Maharashtrian type of making potato subzi. It's also referred to as batata sukhi bhaji recipe. This means batata=taters, sukhi=dry and bhaji=subzi.
This batata bhaji is mild dish which doesn't need any spice powder except turmeric powder. Still it's very flavorful and tasty potato side dish. Eco-friendly chilies and curry foliage is put in the tempering also known as tadka. Curry leaves give this type of nice aroma.
Batata bhaji or aloo subzi can also be offered as naivedyam or bhog to lord ganesha at the time of Ganesh Chaturthi. But for this function many prefers it without onions such as this poori bhaji .

Ingredients:
Taters 2 large or 2 cup, steamed, peeled, and reduce pieces
Oil two tablespoons
Mustard seeds teaspoon
Cumin seeds teaspoon
Eco-friendly chilies 2, chopped finely
Curry leaves 5-6
Turmeric powder teaspoon
Hing or asafoetida a pinch
Onion cup, chopped
Salt to taste
Sugar a pinch
Fresh lemon juice 2 teaspoons
Cilantro or coriander leaves couple of sprigs, chopped finely
Steps to make Batatyachi Bhaji (Step-by-step Recipe with Photos):
1) Take washed potato inside a pressure oven, add enough water so taters are submerged within the water. And pressure prepare it for just two-3 whistles. (cooking or quantity of whistles can vary depends upon the type and size from the potato)
3) Reduce inch pieces. NOTE: to obtain clean cut of steamed potato, 1. allow the potato awesome completely, if at all possible boil in advance and in refrigerator after which chop. if hot or warm taters are chopped it breaks and becomes mushy. 2. prepare the taters till it is only soft, over cooked potato causes it to be mushy and incredibly soft.
4) Also chop onions and eco-friendly chilies. Heat the oil inside a pan on medium heat. Once hot add mustard seeds and allow them to pop. Adding cumin seeds, allow the sizzle.
5) Adding eco-friendly chilies and curry leaves. saute for thirty seconds.
7) Immediately add chopped onions and sprinkle some salt to seep in the process.
9) Add cubed taters and remaining salt, sugar and fresh lemon juice.
11) Lastly add chopped cilantro.
Serving suggestions . this batata bhaji could be offered with roti. paratha or poori. It's also offered like a side dish with Puran poli. As you can tell within the photos, I've offered batata chi bhaji or potato bhaji with puran poli. katachi amti and plain grain.
