  • 45ml butter
  • 250ml water
  • 250g desiccated coconut
  1. Pre-heat the oven to 180C and butter a baking pan of roughly 30 x 20cm.
  2. Beat the eggs and also the castor sugar together.
  3. Add some melted butter and vanilla essence and blend well.
  4. Sift the wedding cake flour, baking powder, cream of tartar and salt together and add alternately using the milk towards the egg mixture and blend.
  5. Pour in to the buttered baking pan and bake within the pre-heated oven for 25 to 25 minutes or before the sponge cake is baked through.
  6. Awesome completely and reduce 40 even sized squares.

I simply love Lamingtons!
