
Khubani ka Meetha is an extremely popular and among the delicacies of Hyderabadi cuisine. It's a common feature at Hyderabadi weddings. It's made from dried apricots. "Khubani" means apricot in urdu language and "meetha" meaning sweet this is exactly why it's known as "khubani ka meetha".
This dessert is my hubby's only favourite that was enjoyed by all on his Birthday. I acquired this recipe from the neighbour who is experienced in preparing this dish. I thank her to make me learn this dish around the big day.
Wash and soak apricots in water for five-6 hrs or overnight. Make certain you set enough water to pay for all of the apricots.
After soaking them for specified time they'll become soft and pulpy. Take away the apricots in the water. Don't toss the drenched water.
Now deseed the apricots. Don't discard the seeds because there are small almond like nuts inside them, which we'll use within the dessert.
Crack open the seeds having a nut cracker to extract the nuts. Now blanch the nuts, take away the skin and aside for garnishing.
Have a vessel add sugar and around 2-3 cups water and boil it for ten minutes to create a thin sugar syrup and aside.
Now boil the deseeded apricots utilizing the same water that they were drenched. Boil them on the high flame for ten minutes after which lessen the flame and prepare for an additional 10-fifteen minutes. Now add some sugar syrup and blend correctly. Boil for an additional ten minutes or till it will get completely cooked. It's fully cooked once the colour changes to brown.
Now remove it inside a serving dish. Once it turns warm include the fresh lemon juice and vanilla essence. Mix correctly. Garnish it using the blanched nuts.
Serve cold or hot without or with ice-cream.
