I personally use a nearby hot sausage with this recipe but without having any handy, any spicy pork sausage works, I did previously use chorizo when I wasn't in Louisiana, it really works very good. You may also use any type of remaining meat if you want. I personally use chicken but also have used pork and delay pills work fine. Use any type of broth you want, I favor chicken. Keep in mind that white-colored grain is awesome but componen steamed grain is much more forgiving.
