To create scrumptious gujarati lauki thepla sieve wheat grains flour (chappati atta) inside a large mixing bowl.
Wash and peel the bottle gourd / lauki and grate the lauki. Go ahead and take grated lauki / dudhi and include wheat flour.
Mix the wheat flour and lauki after which add garlic clove paste. You may also grate the garlic clove after which add it.
Now add dry spices: turmeric powder, coriander powder and red chili powder.
Add salt according to taste.
Mix all of the dry spices in flour.
Now add 1 tablespoons of of oil in thepla dough. Adding oil makes thepla nice soft.
Add 1 tablespoons of of yogurt (curd).
Mix well and knead the dough for lauki thepla. We're not adding any extra water while kneading the dough. The moisture from lauki will help in making a dough.
Knead hard making smooth dough for thepla. Dough for dudhi tepla is prepared. Allow the dough rest for five-ten minutes.
When the dough is rested, divide the dough into small balls roughly size lemon.
Let's knead the dough ball for thepla. Prior to doing so, let's heat the tawa / skillet in order that it becomes hot when the thepla is folded.
Take one dough ball and put it on moving board. Dust the dough with a few wheat flour. Roll the dough into roughly 4-5 " round thepla.
When the tawa/skillet is hot, put the folded lauki thepla and allow it to prepare for couple of seconds. Once bubble starts appearing on the top, switch the paratha. Apply around 1/2 teaspoon oil on the top surface. Prepare the thepla on sides with oil till it turns golden brown.
Lauki thepla is prepared. Repeat above steps making thepla from remaining dough.

- Wheat flour: 1 1/2 cup
- Lauki. 1/2 cup
- Garlic clove. 1 teaspoon
- Coriander powder. 2 teaspoon
- Red chili powder. 1/2 teaspoon
- Turmeric powder: 1/4 teaspoon
- Oil. 1 tablespoons of for dough
- Curd. 1 tablespoons of
- Oil. 4 tablespoons of to make thepla
- Peel the dudhi / lauki and grate it using grater.
- Sieve wheat grains flour (atta) inside a large mixing bowl and add grated lauki.
- Mix the lauki and wheat flour with hands after which add garlic clove paste.
- Now add dry spices like turmeric powder, red chili powder, coriander powder and salt according to taste.
- Mix all spices together after which add around 1 tablespoons of of oil and 1 tablespoons of of yogurt / curd.
- Combine the yogurt into wheat flour and spices and begin kneading the dough for dudhi thepla.
- While kneading the dough, don't add extra water. The moisture from lauki can help in binding the dough.
- Knead the lauki thepla dough and pound it using hands for some time. The dough for lauki thepla is prepared. Keep your dough aside to relax for five-10 min.
- Diving the dough into small lemon size equal balls.
- Have a dough ball on moving board and mud it with a few wheat flour.
- Start moving the dough into 4-5 " round thepla.
- In the intervening time heat a tawa / skillet on medium flame.
- When the tawa is hot, put the folded thepla onto it and roast for couple of seconds.
- When bubbles starts appearing on the top surface, switch the thepla on other part.
- Apply oil on sides of thepla and roast till it might be golden brown colored.
- Lauki thepla is prepared.
- Serve lauki thepla or gujarati dudhi thepla with masala curd, raita, pickle.
