
Brinjal is known as as Kathirikkai in tamil, Vanakaya in telugu and Baigan in hindi. It is among the common vegetable in Indian Kitchen. There's two methods for preparing this Brinjal Curry. One way is stuffing the masala in mix-cut brinjal and frying it. The 2nd technique is frying the lengthwise cut brinjal in gingelly Oil and adding spices into it. The 2nd technique is more simpler. Yields. Side dish for Grain for just two people
- Soak tamarind in serious trouble for ten minutes. Squeeze the seeds and fibre to obtain the tamarind juice. Add salt, turmeric powder, chilli powder and coriander leaves towards the Tamarind Juice.
- Grind coconut and tomato to some smooth paste with the addition of enough water in blender. Heat Oil within the pan and add mustard,cumin seeds, fenugreek seeds and curry leaves
- Once they splutter add onions and garlic clove. Fry till onions turn translucent. Add brinjal and fry it in medium flame up until the brinjal shrinks to half size.
- Add some grind-erectile dysfunction coconut, tomato mixture and fry it for just two- 3 minutes. Add some tamarind juice and let it boil. Cover the gravy using the lid and let it boil for 15 mins in low flame or till oil separates.

Tips:
- Adjust chilli capacity to your taste.
- Tomato could be substituted with tomato paste.
- Coconut could be substituted with adding coconut milk.
